Frankfurter Grüne Soße

A few days ago Eva traded a jar of fresh home made Frankfurt Green Sauce with me for a loaf of Mulberry Bread. The sauce is a classic from west Germany and is served during the spring. I love it with some apple wine. Eva was kind enough to share the recipe with me. And here it is:

  • The 7 spring Herbs:
  • Borage, chervil, cress, parsley, salad burnet, Sorrel and chives
  • 2dl  sourcream
  • 2 dl cream fraice
  • 3 tbsp cream
  • 1/2 pressed Lemon
  • 1 tblsp White wine vinegar
  • 1 tsp Mustard
  • Salt & Pepper
  • 3-4 chopped Hardboiled eggs

Chop the herbs as fine as you can without hurting your fingers. Worst case you can use the blender but the real Frankfurt Green sauce is chopped by hand. Add the rest of the ingredients and make into a sauce.

Serve with boiled fresh potatoes and more eggs.

So simple, and still one of the best spring dishes I know. Thank you Eva!

    Oh, I just meant if you can buy it ready-made.:) I actually checked the website of Waitrose (a big grocery store chain in the UK, kind of upscale) and seems like they don’t have it.
