Finnish Comfort Bread

So now it happened. Someone decided to trade a BREAD for a Selfmade BREAD in my Bread Exchange project. I think most people are aware that if there is something that I am not lacking, then it is bread.

However, There is one bread I AM lacking; Finnish Rye Sourdough.

I am brought up on this bread and I have very sunny memories around it. The bread is dark and really sour. Not sweet at all as most Swedish breads where like back in the 80’s. When I was a kid and my father brought this bread with him from business trips in Helsinki I remember  making a whole tray of slices with Philly and Sprouts for myself and my brother and carried into the TV room to enjoy.  Let’s call this Bread the Finnish Comfort Bread.

The Finnish Comfort Bread is impossible to get in Berlin. I have been secretly hoping that someone from Helsinki would come and ask me if I need anything from Finland. And there she was: Jonna, a blogger  from the Helsinki Gastronomy scene. I did not need to ask, she offered me her home made Bread herself.


I will share half of the bread with Gisela Williams from Food and Wine Magazine. This bread is too good to keep for yourself.

      Thank you for your kind words! “Philly and Sprouts” is nothing but Philadelphia Cheese with something chopped-up, home-grown called just “Sprouts”. I tried to research for you but Google translate could not give me a better name. Sprossen in German? Or Groddar in Swedish 🙂
